HDR images is something i had no clue about until about 3 weeks ago. I kept hearing it, and seeing these cool looking images. I then had to know what HDR was and how you do them!
Wiki defines them as:
High dynamic range imaging: In image processing, computer graphics, and photography, high dynamic range imaging (HDRI or just HDR) is a set of techniques that allows a greater dynamic range of luminances between light and dark areas of a scene than normal digital imaging techniques. The intention of HDRI is to accurately represent the wide range of intensity levels found in real scenes ranging from direct sunlight to shadows.
Down to earth definition:
The human eye can see a lot broader dynamic range (meaning brights and darks) at the same time than a camera can. This is because the human eye can vary its “ISO” or exposure sensitivity locally in just one area rather than only across the whole image. This is what allows you to see the inside of a darkened room as well as the brightly lit world out the window at the same time. A camera could only see one or the other. This is where HDR comes in play. It is combining images so that the resulting image looks more like what your eye sees.
Here is a tutorial on how to create them:

I might create my own tutorial at some point but for now I will just let you use that one.
That link is to create them using photoshop but there are many other programs which you can create HDR images as well. Below are some of my favorite HDR images.

You can veiw the images larger by clicking on them, As well consider looking at the photographers other work.
I am hoping to create some myself soon. when I do I will upload them into my gallery.
